A herb that goes by many names (Puerto Rican Oregano), this tropical beauty, is neither Caribbean or oregano (native to SE Asia), has a penetrating scent that fills the air when you brush past it. Its aroma and flavor are between oregano and sage and can be used interchangeably with those herbs in numerous dishes. Tender shoots make lovely garnishes for salads and drinks. Mature leaves can be whirled in a processor with olive oil, strained and drizzled over oven-roasted red snapper.
